Widely touted as a go-to snack by wellness experts, avocados are high in folic acid, fiber, potassium, vitamin E, B-vitamins and healthy fats, while being low in calories and naturally sodium- and cholesterol-free. While there has been endless hype over avocado toast, why not go for something more unique and try your hand at incorporating the nutrient-dense fruit via one of these sweet avocado-infused recipes?

“I love this key lime pie because it is easy to make, but impressive enough for a dinner party. This pie is delicious and rich thanks to healthy fats from avocados as well as almonds, pumpkin seeds and coconut oil. It’s 100 percent raw vegan, gluten-free, dairy-free and soy-free, making it an easy-to-digest and guilt-free sweet treat.”

Green Tiye’s Key Lime Pie

Base:

  • 1/4 cup almonds
  • 1/2 cup pumpkin seeds
  • 1/4 cup unsweetened shredded coconut
  • 10 pitted dates
  • 3 tablespoons coconut oil

Soak the nuts and seeds overnight. Drain nuts and use a food processor to combine with other ingredients until sticky, but still slightly crumbly, and press into a greased pan. You can use a full-sized pie tin or several small ramekins.

Filling:

  • 2 avocados
  • Juice from 3 limes
  • 2 tablespoons coconut oil
  • 1/2 teaspoon chia seeds
  • Stevia to sweeten
  • A pinch of Himalayan salt

Blend filling and pour into crust shell. Put in the freezer for about 10-30 minutes to set.

Avocado Ice Cream with PineappleFor the ice cream:

  • 2 ripe Hass avocados
  • 1 can coconut milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1/2 teaspoon rum
  • Pinch of salt
  • A squeeze of fresh lime juice

Halve the avocados and crush them; put everything in the blender and mix until smooth. Place in a plastic container and freeze for 12 hours. You can garnish with toasted shaved coconut if desired.

For the pineapple:

  • 1 cup water
  • 1/4 cup sugar
  • 1 teaspoon rum
  • 1/2 pineapple peeled and diced

Bring to a boil the water and the sugar, add the rum, the pineapple and bring back to the boiling point. Remove from stove-top and let it cool down before placing it in the fridge for one hour.

Ganache/Chocolate Mousse with Avocado

For the ganache/mousse:

  •  2 ripe avocados
  • 1 banana
  • 1/2 cup raw cacao powder
  • 1/3 teaspoon organic vanilla beans or vanilla bean powder
  • 1/3 cup fresh coconut meat
  • 2 dates

For the decoration:

  • 3 pieces of HNINA chocolates, Brazil nuts + almonds + coconut flavor
  • Raw sprouted and dehydrated Brazil nuts and almonds cut in pieces
  • 1 teaspoon cacao powder
  • 1 teaspoon organic unsweetened coconut chips

For the cream: Put all the ingredients into the blender and blend until you have a thick and smooth mousse. Insert all the cream into ice cream goblets. Then add on top of the ganache, the HNINA chocolates, the coconut chips, the pieces of Brazil nuts and almonds followed by the cacao powder. Leave it one hour in the freezer for a more ice cream effect.

Avocado Banana Smoothie 

  • 1 avocado
  • 1 banana
  • 1 tablespoon matcha green tea powder
  • 4 ice cubes
  • 1 cup almond milk
  • Vanilla WellPath powder (but any other vanilla flavor works here — stay away from chocolate-based flavors)
